Loaded Mediterranean Breakfast Fries with Tzatziki
Crispy seasoned fries topped with tomatoes, red onion, olives, cucumber, feta, fried eggs and a homemade tzatziki sauce. These loaded breakfast fries make for a delicious and fun start to the day!
Cook your fries according to packaging instructions. If you are using frozen fries, toss the fries with the paprika, salt and oregano right after the fries are cooked. If you are using air chilled fries or homemade, season fries before cooking with a drizzle of olive or avocado oil.
To make the tzatziki sauce, add the Greek yogurt, lemon juice, grated garlic clove, fresh dill, olive oil, salt, and grated cucumber. Stir together until fully combined. Taste and adjust salt to taste.
When the fries are almost done cooking, make the feta fried eggs by adding 1 Tablespoon of olive oil to a skillet over medium heat. Add the two tablespoons of crumbled feta in two circles to hold each egg. Let the feta cook for about 1 minute. Gently crack your eggs on top of the feta. Cover and cook until the egg whites have fully set and the yolk has reached your desired doneness. Add salt and pepper to the eggs to taste.
To build the breakfast fries, add the cooked and seasoned French fries to a serving plate. Top with the diced tomatoes, diced cucumber, olives, and red onion. Add the fried feta eggs on top. Sprinkle over some feta and drizzle over the tzatziki sauce. Garnish with extra fresh dill. Enjoy immediately.
