Make Ahead Breakfast Burritos with Hash Browns and Spicy Avocado Crema

Crispy breakfast burrito with hash browns, fluffy eggs, bacon, and a creamy spicy avocado crema. Make a batch ahead and freeze for easy mornings all week!

Ingredients
 

  • 4 Tortillas (Burrito size)
  • 8 Eggs
  • 1/4 C. Milk
  • Salt and Pepper to taste
  • 1 Tbsp. Oil
  • 1/2 Onion (finely diced)
  • 1 Bell Pepper (finely diced)
  • Hash browns (16 oz shredded hash browns or 4 hash brown patties)
  • 1 Cup Cheddar Cheese (shredded (gouda or pepper jack as replacment)
  • 8 slices of Bacon

Spicy Avocado Crema

  • 1 Avocado
  • 1/3 Cup Greek Yogurt
  • 2 Tbsp. Mayo
  • 1 Lime (Juiced)
  • 1/2 Jalapeño
  • Salt to taste
  • 1 Tbsp. Avocado Oil
  • 1 Garlic clove
  • 1/4-1/2 tsp. Chipotle powder

Instructions
 

  • Make the spicy avocado crema first by adding all crema ingredients to a food processor. Blend until smooth and creamy. Taste and adjust salt as needed. Set aside in the fridge until ready to serve.
  • Cook your hash browns according to package instructions, whether in the oven, air fryer, or skillet. Cook them until crispy. Set aside.
  • Cook the bacon until crispy. Set aside on a paper towel lined plate.
  • Heat 1 tablespoon of oil in a large skillet over medium heat. Add the diced onion and bell pepper and sauté until softened, about 3 to 4 minutes.
  • Whisk the eggs together with the milk, salt, and pepper. Pour the egg mixture into the skillet with the veggies. Cook low and slow, stirring gently, until the eggs are just set. Remove from heat and season with salt and pepper to taste.
  • To build each burrito, lay a tortilla flat. Add a layer of shredded cheese first, then hash browns, then the scrambled egg mixture, and then two slices of bacon. Fold in the sides and roll the burrito up tightly, seam side down.
  • Heat a little oil in the same skillet over medium heat. Place the burritos seam side down and cook until golden and crispy, about 2 to 3 minutes per side.
  • Serve immediately with the spicy avocado crema for dipping or drizzling. Enjoy!
