Savory Oatmeal Bowls with Sautéed Mushrooms and Sriracha Mayo

Savory oatmeal with sautéed mushrooms, a fried egg, chili oil, and a creamy sriracha mayo sauce. A hearty, flavorful breakfast ready in about 20 minutes.
Prep: 5 minutes
Cook: 15 minutes

Ingredients

  • 1/2 Cup Old Fashioned Rolled Oats
  • 1 1/4 Cup Chicken broth
  • 1 Tbsp. Avocado Oil (divided)
  • 1 tsp. Fresh ginger (minced or grated)
  • 1 garlic clove (minced)
  • 2 Eggs
  • 2 tsp. Soy sauce
  • 1/2 tsp. Sesame oil
  • 2 Cup Mushrooms (sliced)
  • Scallions or Chives to taste
  • Chili oil to taste

Sriracha Mayo:

  • 1 Tbsp. Sriracha (add more or less to taste)
  • 1 Tbsp. Mayo
  • 3 Tbsp. Greek Yogurt
  • 1 small garlic clove (grated)
  • 1/4 tsp. Rice Vinegar
  • Drizzle of honey to taste

Instructions

  • To make the sriracha sauce, add all the ingredients together and whisk until smooth. Adjust the honey to your personal taste. Set aside.
  • Add 1/2 tablespoon of avocado oil to a medium pan over medium heat. Add the garlic and ginger and sauté for 1 minute.
  • Add the chicken broth and oats. Cook over medium-low heat, stirring occasionally, until the oats are tender and most of the liquid has been absorbed, about 10 minutes.
  • Stir in the soy sauce and sesame oil. Taste and adjust seasoning as needed.
  • While the oats are cooking, heat the remaining oil in a large skillet over medium heat. Add the mushrooms and sauté until tender and golden, about 5 minutes.
  • Push the mushrooms to one side of the skillet. If the pan looks dry on the empty side, add a small pat of butter or a drizzle of oil. Crack the eggs into the skillet and cook until the whites are fully set and the yolk has reached your desired doneness.
  • Divide the savory oatmeal between two bowls. Top each with a fried egg, sautéed mushrooms, a drizzle of chili oil, scallions or chives, and a spoonful of the sriracha sauce. Enjoy immediately.
