Spicy Loaded Breakfast Fries with Jalapeño Aioli

Seasoned French fries loaded with melty cheese, scrambled eggs, jalapeño sliced, bacon, cilantro, avocado and homemade Jalapeño aioli. A simple yet flavorful breakfast, brunch or even dinner recipe.

Ingredients
 

  • 1 package of Frozen Fries (about 1.5 lbs)
  • 1/2 tsp. Paprika
  • 1/4 tsp. Chili powder
  • 1/4 tsp. Garlic powder
  • 1/4 tsp. Onion powder
  • Pinch of chipotle powder (or cayenne pepper)
  • Salt to taste
  • 4 Eggs
  • 1 Tbsp. Milk
  • 1 Tbsp. Butter
  • 4 slices Bacon (cooked and crumbled)
  • 1/2 C. Cheese (shredded (cheddar, pepper jack, Monterey jack))
  • 1/2 Jalapeño (Sliced)
  • Cilantro to taste
  • 1/2 Avocado (sliced)

Jalapeño Aioli

  • 1/4 C. Mayo
  • 1/4 C. Greek Yogurt
  • 1/2 Jalapeno
  • 1 Garlic Clove
  • 1/2 lime (juiced)
  • 1/4 C. Cilantro
  • 1/2 Tbsp. Olive oil
  • Salt to taste

Instructions
 

  • Cook your fries according to packaging instructions. If you are using frozen fries, toss the fries with the paprika, chili powder, garlic powder, onion powder, and chipotle powder right after the fries are cooked. If you are using air chilled fries or homemade, season fries before cooking with a drizzle of olive oil.
  • While the fries are cooking, make the jalapeño aioli by combining the mayo, Greek yogurt, half of a jalapeño, garlic clove, lime juice, cilantro, olive oil, and salt to a food processor or blender. Blend until smooth. Taste and adjust salt level if needed.
  • Make the scrambled eggs by combining the eggs, milk and butter to a cold skillet. Turn heat on to medium-low heat. Break up the egg yolks with a spatula and mix in with the milk. Stirring frequently, cook the eggs they are fully set. Season with salt and pepper to taste.
  • Once the fries are cooked and seasoned, add the fries to a serving dish. Top evenly with the shredded cheese. Place the fries in the microwave or oven until the cheese has melted.
  • Top the cheesy fries with the scrambled eggs, jalapeño slices, cilantro, cooked bacon, and avocado slices. Drizzle the jalapeño aioli over the fries or serve on the side for dipping (or both!). Enjoy immediately.
