Spinach Pesto Egg Sandwich on Ciabatta

This spinach pesto egg sandwich is ready in under 20 minutes with fluffy scrambled eggs, melty Havarti, tomatoes, and a bright homemade spinach pesto on ciabatta.

Ingredients
 

  • 2 Ciabatta Buns (or 4 slices of sourdough bread)
  • 4 Eggs
  • 2 Tbsp. Milk
  • 1 tsp. Butter (plus more to spread on bread)
  • 2 Roma Tomatoes (sliced)
  • 1.5 Ounces Havarti cheese (Shredded)

Spinach Pesto:

  • 1 Cup Spinach leaves
  • 2 Tbsp. pine nuts (toasted)
  • 1 Tbsp. Lemon juice
  • 1 garlic clove
  • Pinch of salt and pepper
  • 2-3 Tbsp. Olive oil
  • 1/4 Cup Parmesan cheese (shredded)

Instructions
 

  • Make the spinach pesto by adding all the pesto ingredients to a food processor or blender. Blend until smooth. Taste and adjust salt and pepper as needed. If the pesto is too thick, add one more tablespoon of olive oil and blend again.
  • Whisk the eggs and milk together in a bowl. Add the butter to a skillet over medium heat. Pour in the eggs and cook, stirring frequently, until the eggs are just set and no longer runny. Remove from heat and set aside.
  • Drizzle a little olive oil or avocado oil over the cut sides of the ciabatta rolls. Place in the air fryer at 400 degrees for 3-4 minutes, or until golden and toasted.
  • Spread a generous layer of spinach pesto onto both halves of each toasted roll. Divide the scrambled eggs evenly over the bottom halves and top with shredded Havarti cheese. Place back in the air fryer at 400 degrees for 1-2 minutes, just until the cheese has melted.
  • Top with sliced tomatoes, close the sandwiches, and enjoy right away!

Notes

No air fryer? No problem. You can toast the ciabatta rolls in the oven instead. Place them cut side up on a baking sheet and broil for 2-3 minutes until golden. After adding the eggs and cheese, pop them back under the broiler for 1-2 minutes until the cheese melts. Keep a close eye on them so they don't burn.
