Sourdough: This one is my favorite option for bread to hold the garlic butter and eggs! The flavor of the soughdough really adds to the egg boat. And the majority of sourdough loaves are hearty. Sourdough batard or baguettes provide the right shape for the egg boats and are easy to find a most grocery stores.

French Bread: A classic bread to use for garlic bread and is a great choice for this breakfast recipe. The bread can hold up to the fillings are is easy to find.

Ciabatta Bread: Ciabatta bread can work, but may be a little harder to work with compared to sourdough or French bread. You will need to be sure you get demi baguettes and be sure to avoid any loaves that are too flat. You might need two baguettes and may not be able to fill as much egg into the middle.

  1. Be careful to not puncture the bread when cutting the top and scooping out the center. If the bread gets punctured, the egg will run through onto the cookie sheet. So just take your time and do not worry about removing all the excess bread.
  2. Whisk the eggs up in a measuring cup for an easier pour into the bread.
  3. Bake time can really vary with this breakfast recipe. I found when testing the time was really impacted by the bread I used. You might need longer or less time than I recommend. Just keep an eye on it and remove from the oven when the eggs are fully set.
  4. If your eggs are taking awhile to set, you will probably will want to tent the bread with some foil. Or if you feel like the bread is getting too toasty, tent that bread!
  5. You may need more or less eggs depending on the size of the bread loaf you are using. Just be sure not to overfill the bread with the eggs since they will “fluff” up a little while baking.
  6. I find this garlic bread egg boat is best enjoyed hot from the oven. If you are wanting to meal prep it, you can make the garlic butter a few in advance and store it in the fridge in a airtight container. When ready to use, let the butter soften before trying to spread it onto the bread.

Baked Garlic Bread Breakfast Egg Boat

A loaf of bread filled with garlic butter and fluffy eggs, creating a unique and delicious breakfast or brunch. Easy to make and perfect for sharing!

Ingredients
 

  • 1 loaf of French bread or sourdough bread
  • 1/4 C. Butter (softened)
  • 1 Tbsp. Parsley (chopped)
  • 4 Garlic cloves (minced)
  • Salt to taste
  • Pepper to taste
  • 1/4 C. Parmesan cheese
  • 4 Eggs
  • 1/4 C. Milk
  • 1 Tbsp. Chives (minced)
  • 1/2 C Cheddar cheese (shredded)

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a medium bowl, combine the softened butter, parsley, garlic, Parmesan cheese and salt to taste together. Stir together until fully combined. Set aside.
  • Carefully cut the top off of the loaf of bread, and scoop out some of the inside to create space for the eggs. Be careful not to puncture the bread and you leave the crust fully intact..
  • Using a spatula (or knife), spread the garlic butter all over the inside of the bread, making sure to get the sides and bottom.
  • Bake the bread for 10 minutes.
  • While the bread is in the oven, prepare the eggs by adding the eggs, milk and chives to a measuring cup (this will make it easier to pour into the bread) Whisk together. Season with a little salt and pepper.
  • Once the bread is out of the oven, carefully pour the eggs into the bread. Watch the eggs to make sure they will not spill out and stop short if needed.
  • Bake for 30-35 minutes or until the eggs have fully set. If the bread is getting too toasty, tent with a little foil.
  • Once the eggs are set, remove from the oven and add the cheddar cheese. Return to the oven for additional 2-3 minutes or until the cheese is melted.
  • Slice and enjoy!
