French Fries: I opt for store bought fries that I can just throw into the air fryer or oven. Frozen or air chilled thick cut or waffle fries are good options. You of course can make your own French fries as well.
Fry Seasoning: Add flavor to fries with salt, paprika, chili powder, garlic powder, onion powder and pinch of chipotle powder. You can use cayenne pepper in place of the chipotle powder.
Eggs: You will need 4 eggs to make the scrambled eggs.
Milk: A splash of milk mixed into the eggs to create fluffy scrambled eggs.
Butter: Butter is used to make the fluffy scrambled eggs.
Bacon: Cooked and crumbled bacon is added to the loaded fries. You can leave the bacon off if you wish.
Cheese: You can use cheddar, pepper jack, Monterey jack or even gouda. If possible, shred your own cheese instead of using pre-shredded cheese. Pre-shredded cheese often has a anti-caking agent that can interfere with the melting process.
Jalapeño: Sliced Jalapeño adds a little texture and spice to the breakfast fries. You can use red or green Jalapeño. Remove the seeds and veining for a little less spicy.

If you are using frozen fries, toss the fries with the paprika, chili powder, garlic powder, onion powder, and chipotle powder right after the fries are cooked. If you are using air chilled fries or homemade, season fries before cooking with a drizzle of olive oil.
- While the fries are cooking, make the jalapeño aioli by combining the mayo, Greek yogurt, half of a jalapeño, garlic clove, lime juice, cilantro, olive oil, and salt to a food processor or blender. Blend until smooth. Taste and adjust salt level if needed.
