Easy to make: You can whip these breakfast fries up in less than 30 minutes! You can save even more time by making the pesto ahead of time or using store bought.
What I Love:
- These loaded breakfast fries are bight, flavorful and so memorable! They are perfect for just one serving or to make for a crowd. You can just adjust the amount of ingredients depending on how many people are serving.

Ingredients and variations
French Fries: I opt for store bought fries that I can just throw into the air fryer or oven. You of course can make your own French fries as well.
Egg(s): You can add only one egg or five eggs, depending on how many people you are serving and how many eggs you would like to add. I like to use two eggs for these breakfast fries.
Burrata: Creamy burrata cheese adds that classic caprese flavor the the fries. You can swap the burrata for fresh mozzarella.
Tomatoes: Use your favorite variety of tomato to pair with the caprese French fries. Cherry, grape, roma, heirloom, campari or on-the-vine are all great options.
Pesto: You can use store bought or the homemade pesto recipe below for these fries. If making your own, you will need fresh basil, pine nuts, lemon, parmesan cheese, olive oil, garlic clove, salt and pepper.
Balsamic glaze: I use store bought balsamic glaze to save time making this breakfast dish, but you make your own glaze.

Recipe FAQs
What kind of fries work best for this recipe?
Thick cut fries work the best for this recipe. Steak fries, waffle, or crinkle-cut are good options. Whether you opt for store bought or homemade, just be sure to get the fries crispy to hold up to the all delicious toppings.
What can I use instead of burrata?
Fresh mozzarella cheese is a good replacement for the burrata cheese. You could use a low-moisture mozzarella cheese and melt it over the fries in a pinch, but they will lack that creamy texture you get from the fresh mozzarella. If you go with low moisture, you can add the cheese over the crispy fries and then place in the oven for a few minutes to make the cheese melty.
How can I prevent the fries from getting soggy?
Bake or air fry the French fries until crispy, then add toppings immediately before serving rather than letting them sit.
Can I meal prep these breakfast fries?
These loaded breakfast are best made fresh. You can make the pesto in advance to save a little time.
What is the best way to reheat leftovers?
Reheat the fries alone in the oven or air fryer to re-crisp them, then add fresh toppings and a freshly fried egg rather than reheating everything together, since the tomatoes and egg don’t reheat well.
