Why You’ll Love This Recipe
A fresh twist on loaded fries: Swaps heavy, greasy toppings for bright, Mediterranean flavors that feel lighter without sacrificing indulgence.
Great for sharing: Easy to pile onto a big platter for brunch gatherings, game days, or casual get-togethers.
Comes together quickly: Mostly relies on simple prep (chop, fry, assemble), making it approachable for a weekend breakfast.
What I Love:
- These loaded Mediterranean fries are packed with fresh veggies. Juicy tomatoes, crisp cucumber, and red onion add crunch, color, and freshness in every bite.

Ingredients and substitutions
Fries: I opt for store bought fries that I can just throw into the air fryer or oven. Frozen or air chilled thick cut or waffle fries are good options. You of course can make your own French fries as well.
Fry Seasoning: Give the fries flavor by tossing them in salt, paprika and oregano.
Feta: Feta cheese is used to create flavorful fried eggs and to garnish the loaded breakfast fries.
Olive oil: A drizzle of olive oil is used in the skillet to fry the eggs. You can use avocado oil or butter in place of the olive oil.
Eggs: I like to use two eggs to add to this Mediterranean breakfast recipe, but you could just use one or four. If making more than two, increase the amount of feta to about 2 tablespoons per egg.
Red Onion: Sliced red onion is added to personal taste. You could swap for a white or sweet onion in a pinch.
Tomatoes: You can use your favorite type of tomato to add to the layers of these fries. Cherry, grape, roma, heirloom, campari or on-the-vine are all great options.
Olives: You can use black or green olives.
Cucumber: About half of a cucumber keeps these fries feeling light and fresh. You can choose to peel or leave the skin on the diced cucumber based on personal preference.
tzatziki: The homemade tzatziki sauce is made with Greek yogurt, garlic clove, olive oil, grated cucumber, lemon juice, salt and fresh dill. You can replace the fresh dill with dried if needed. Just reduce the dill to about 1 teaspoon of dried dill.

How to make loaded Mediterranean breakfast fries with tzatziki: step-by-step instructions.
- Cook your fries according to packaging instructions. If you are using frozen fries, toss the fries with the paprika, salt and oregano right after the fries are cooked. If you are using air chilled fries or homemade, season fries before cooking with a drizzle of olive oil.
- To make the tzatziki sauce, add the Greek yogurt, lemon juice, grated garlic clove, fresh dill, olive oil, salt, and grated cucumber. Stir together until fully combined. Taste and adjust salt to taste.
- When the fries are almost done cooking, make the feta fried eggs by adding 1 tablespoon of olive oil to a skillet over medium heat. Add the two tablespoons of crumbled feta in two circles to hold each egg. Let the feta cook for about 1 minute. Gently crack your eggs on top of the feta. Cover and cook until the egg whites have fully set and the yolk has reached your desired doneness. Add salt and pepper to the eggs to taste.
- To build the breakfast fries, add the cooked and seasoned French fries to a serving plate. Top with the diced tomatoes, diced cucumber, olives, and red onion. Add the fried feta eggs on top. Sprinkle over some feta and drizzle over the tzatziki sauce. Garnish with extra fresh dill. Enjoy immediately.
Sara’s Tip
Personalize the loaded breakfast fries to your personal taste! Remove ingredients, such as the olives or cucumbers. Or add to humus, chickpeas, or even a romesco sauce. These fries are so versatile!

Recipe FAQs
What are the best fries to use?
Thick cut fries work the best for this recipe. Steak fries, waffle, or crinkle-cut are good options. Whether you opt for store bought or homemade, just be sure to get the fries crispy to hold up to the all delicious toppings.
Can I make the tzatziki sauce ahead of time?
Definitely, tzatziki actually tastes better after sitting for a bit, letting the flavors meld. Make it up to 2 days ahead and store it covered in the fridge.
How do I keep the fries from getting soggy once loaded?
Assemble the fries right before serving, and make sure your fries are extra crispy going in. Also, pat your cucumbers and tomatoes dry before adding them, since excess moisture is the main culprit.
Can I make this dairy-free?
You can omit the feta and swap the tzatziki for a dairy-free yogurt-based alternative, though the flavor will be slightly different from the traditional version.
Can I prep the toppings ahead of time?
Yes, you can chop the cucumber, tomatoes, red onion, and olives up to a day ahead and store them separately in the fridge. Just fry the fries and egg fresh before assembling.
