Breakfast Pockets with Cottage Cheese Dough, Bacon, and Eggs

This post may contain affiliate links.

Breakfast pockets sound fancy, but they are honestly one of the easiest things you can make for a crowd or for meal prep. Scrambled eggs, crispy bacon, and shredded cheese all wrapped up in a simple four ingredient-style cottage cheese dough. No yeast, no rising time, no fuss. Just mix, roll, fill, and bake

I created these because I was tired of the same old breakfast rotation and wanted something the whole family would actually get excited about. These little pockets check every box. They’re filling, they reheat like a dream, and the kids can grab one on the way out the door without needing a plate. That’s a win in my book. And one breakfast pocket has about 27 grams of protein!

If you love a good meal prep breakfast idea, you will want to add these to your weekly rotation. My easy meal prep breakfast sandwiches are proof that a little prep on Sunday makes the whole week smoother, and these breakfast pockets do the same thing.

Why You’ll Love This Recipe

Cottage cheese dough: No yeast, no wait time. The dough comes together quickly and bakes up soft on the inside with a little golden color on the outside, all while adding an extra protein boost.

Great for meal prep: Make a batch on the weekend and reheat throughout the week. These hold up really well in the fridge.

Customizable filling: Swap the cheese, change up the protein, or add veggies. The filling is totally flexible to your personal taste.

What I Love:

  • These are a hit with both kids and adults. I love that they feel like a special breakfast but come together with simple, everyday ingredients.

Ingredient Notes and Substitutions

Cottage Cheese: This is the star of the dough. Blend it smooth before adding it to the flour. This helps the dough come together evenly. You can use full-fat or low-fat cottage cheese. Full-fat will give you a slightly richer dough. You can replace with a plain Greek yogurt if needed.

Shredded Cheese: Cheddar, Gouda, and Monterey Jack all work great here. Use whatever you have on hand or mix and match based on personal taste.

Bacon: Six slices of cooked bacon fills all six pockets with one slice each. You can swap for cooked breakfast sausage, turkey bacon, or even ham in a pinch.

Everything Bagel Seasoning: This is sprinkled on top before baking and gives the pockets a little crunch and big flavor. You can use sesame seeds or skip it altogether if needed.

How to Make Breakfast Pockets: Step-by-Step Instructions

  1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Whisk the eggs together with the milk. Add a drizzle of oil or a pat of butter to a skillet over medium heat. Add the eggs and scramble until just set. Season with salt and pepper. Remove from heat and let cool while you make the dough. It is important to let the eggs cool before filling the dough.
  3. In a large bowl, whisk together the flour, salt, and baking powder.
  4. Add the cottage cheese to a blender or food processor and blend until smooth. Pour the blended cottage cheese into the flour mixture and stir to combine. Use your hands to fully bring the dough together. The dough will feel a little dry and flakey at first, that is normal. If the dough feels too dry, add 1-2 tablespoons more of blended cottage cheese. Form it into a ball.
  5. Flour a large, clean surface. Add the dough and roll it out to roughly 24 inches long in a rectangle shape. Make one cut lengthwise down the center, then two horizontal cuts to create 6 equal pieces.
  6. In the center of each piece, add a portion of scrambled eggs, one slice of cooked bacon, and shredded cheese. Carefully pull all the sides of the dough up and around the filling, pinching them together to create a sealed ball shape. Place seam side down on the prepared baking sheet.
  7. Whisk one egg together in a small bowl. Brush each pocket with egg wash and sprinkle generously with everything bagel seasoning.
  8. Bake for 15-20 minutes or until the tops are golden brown. Let cool slightly before serving.

Sara’s Tip

Do not skip letting your scrambled eggs cool before adding them to the dough. Hot eggs make the dough sticky and harder to work with, which increases the chance of it ripping. But keep in mind, it is also completely okay if the dough tears a little when you seal the pockets. They will still hold together in the oven and taste just as good. Work gently and do not stress about getting them perfectly smooth.

Recipe FAQs

Can I make these ahead of time?

Yes! These are a great make-ahead breakfast recipe. Bake them fully, let them cool, and store in an airtight container in the fridge for up to 4 days. Reheat in the microwave for about 60 seconds or in the oven at 350 degrees until warmed through.

Can I freeze breakfast pockets?

Absolutely. Let them cool completely, then wrap each one individually in plastic wrap and place in a freezer bag. Freeze for up to 2 months. Thaw in the fridge overnight and reheat before serving. Or just pop right into the microwave from the freezer until heated through.

What cheese works best?

Cheddar gives you that classic breakfast flavor, Gouda melts beautifully, and Monterey Jack keeps things mild and melty. All three are great options depending on what you have. I try to avoid pre-shredded cheese since the anti-caking agents used on the cheese can prevent it from melting nicely.

Can I add vegetables to the filling?

Yes! Diced bell peppers, spinach, or sautéed mushrooms all work well. Just make sure any veggies are cooked and any extra moisture is removed before adding to the dough. Too much moisture can cause the dough to tear or become soggy.

Why is my dough too dry?

Cottage cheese brands vary in moisture content. If your dough feels too dry and crumbly to come together, add one tablespoon of blended cottage cheese at a time and work it in with your hands until it just holds together. Can I use a different protein instead of bacon?

Yes, breakfast sausage, turkey bacon, diced ham, or even leftover shredded chicken all work well inside these pockets. My homemade chicken sausage patties crumbled up would be delicious inside these.

How do I know when they are done baking?

Look for a deep golden brown color on the tops. If the tops look pale, give them another 2-3 minutes. Every oven runs a little differently, so start checking around the 15-minute mark.

How to Store Leftovers

Store cooled breakfast pockets in an airtight container in the fridge for up to 4 days. For the best texture, reheat in the oven at 350 degrees for about 8-10 minutes, or microwave for 60 seconds or until heated though. They also freeze really well for up to 2 months. Just wrap individually before freezing.

These are a staple in my quick and easy breakfast recipes rotation because once you have a batch in the fridge, busy mornings feel so much more manageable.

Notes

  1. The dough will be dry, but should stick together and hold its shape when formed into a ball. It should not be too sticky. If your dough feels too dry, add 1 tablespoon more of blended cottage cheese at a time until the dough comes together.
  2. If the dough is sticking to your hands while forming the balls to wrap the filling, wet your hands with a little water.
  3. Oven temperature variations and dough thickness can change the bake time. Make sure the dough is not too thick so it cooks through. The breakfast pockets are ready to come out of the oven when they tops are golden brown. You can also check the bottom of the pockets. They should feel set and firm. If they are soggy, give a few more minutes in the oven.
