I got my inspiration for this protein pancake recipe from my fall forward apple cottage cheese pancakes, just with a few tweaks to make them full of Christmas vibes. I really love that these pancakes have the cottage cheese hidden them, helping boost that protein! You cannot even tell the cottage cheese in the pancakes, so I am able sneak in that extra protein without my little kids even knowing it is there!

Ingredients needed to make these protein eggnog pancakes and Substitutions
All-Purpose and Wheat Flour: The flour is made up part all-purpose flour and wheat flour. Mixing the two flours keeps the pancakes light and fluffy. You can use just all-purpose flour instead of wheat if you wish.
Baking powder and Soda: The leavening agents used in these pancakes.
Salt: Enhances the flavor of the pancakes. There is a good amount of sodium in the cottage cheese, but a touch more salt is needed to keep these pancakes from falling flat in flavor. You can reduce to 1/4 teaspoon if trying to stay low sodium.

Vanilla Extract: Adds to the flavor of the protein pancakes.

Tips and tricks to making these festive pancakes
- Be careful to not overmix your pancake batter! There will be lumps. Overmixing will actually cause denser pancakes. To keep them fluffy, mix the wet ingredients into the dry until just combined.
- You can make either four large pancakes or 6 small pancakes! Just be sure not to overcrowd the skillet or griddle.
- The pancakes will be ready to flip when the edges of the pancakes are set, and the bubbles are on top are popping. Be sure to use medium-low heat so the pancakes do not burn but still get a nice golden color.
- Serve the pancakes with your favorite pancake topping! Maple syrup, whipped cream, cinnamon sugar, and fruit would all make great additions to these cottage cheese pancakes.

Easy Protein Eggnog Pancakes with Cottage Cheese
Ingredients
- 3/4 C. All-Purpose flour
- 1/2 C. Wheat flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 Tbsp honey
- 2 Tbsp. Butter melted
- 1/2 tsp. Salt
- 1 tsp. Vanilla extract
- 2 eggs
- 3/4 C. Cottage cheese
- 1 C. Eggnog
- 1 tsp. Cinnamon
- 1/4 tsp. Nutmeg
Instructions
- In a medium mixing bowl, combine the flours, baking soda, baking powder, salt, nutmeg, and cinnamon together in a large mixing bowl. Whisk together and set aside.
- Using a large blender, add the eggs, eggnog, cottage cheese, vanilla extract, honey and melted butter into the blender. Blend until smooth.
- Pour the blended wet ingredients into the dry. Mix until just combined, being careful not to over-mix. Is ok if there are lumps.
- Heat a lightly greased skillet or griddle over medium-low heat. Once hot, spoon the pancakes on to skillet, making either 4 large or 6 small pancakes.
- Cook until the edges are starting to cook and the bottom of the pancake is golden brown. Flip and cook the other side until golden brown.
- Serve immediately with topping of choice, such as butter and maple syrup
