Breakfast potato bowls are one of those recipes that once you make them, they become part of your regular rotation. Roasted potatoes seasoned with smoked paprika and cumin, cottage cheese scrambled eggs that are incredibly fluffy, and a quick chipotle sauce you’ll want to put on everything. Load them up with all your favorite toppings and breakfast is handled.

The potatoes roast up crispy and flavorful in the oven while you handle everything else, and the whole bowl comes together without much effort at all. It’s one of those recipes that works just as well fresh out of the oven on a Sunday as it does reheated from the fridge on a Tuesday.

Ingredient Notes and Substitutions

Potatoes: Red or Yukon gold potatoes both work well. They hold their shape during roasting and get crispy on the outside without turning mushy. Russets can work in a pinch but tend to be a bit more dry.

Cottage Cheese: Blending cottage cheese into the eggs adds protein and keeps the eggs extra fluffy and moist, even after reheating. You can omit it and just use two additional eggs if you prefer, or use a dairy-free plain yogurt as a swap.

Eggs: Ten eggs makes enough for about four to five servings. You can scale up or down based on how many people you’re feeding or how long you want the meal prep to last.

Shredded Cheese: Use your favorite melting cheese. Cheddar, Monterey Jack, or a pepper jack all work really well here. I recommend shredding your own cheese. Pre-shredded cheese often has anti-caking agent on that can interfere with the melting process.

Chipotle Powder: Start with 1/4 teaspoon if you’re sensitive to heat, and work up to 1/2 teaspoon for more of a kick. The Greek yogurt and mayo in the sauce help balance the spice.

Bell Pepper: Any color bell pepper works. Red and yellow are slightly sweeter, while green is a bit more savory. All are great options.

How to Make Breakfast Potato Bowls: Step-by-Step Instructions

  1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper. Add the diced potatoes, onion, and bell pepper to the baking sheet. Drizzle over the oil and add the smoked paprika, chili powder, cumin, garlic powder, and salt. Toss everything together until well coated.
  2. Roast for 30-45 minutes, or until the potatoes are tender and starting to get crispy on the edges. Give them a toss halfway through for even roasting.
  3. While the potatoes roast, make the chipotle sauce. Add the mayo, Greek yogurt, chipotle powder, grated garlic, lime juice, salt, and water to a food processor. Blend until smooth. Taste and adjust the salt or chipotle powder to your liking. Set aside.
  4. To make the cottage cheese scrambled eggs, add the eggs and cottage cheese to a blender and blend until smooth and combined. Heat a pat of butter in a skillet over medium-low heat. Pour in the egg mixture and scramble slowly, stirring often. Stir in the shredded cheese just before the eggs are fully set. Season with salt and pepper to taste. Do not overcook, especially if you are planning to reheat the eggs later.
  5. Build your bowls by adding the roasted potatoes as the base, then top with the scrambled eggs. Add any optional toppings you love. Sliced avocado, pico de gallo, jalapeños, sour cream, hot sauce, or fresh cilantro. Drizzle the chipotle sauce over the top and enjoy.

If you are meal prepping these bowls, store just the potatoes and eggs together in airtight containers in the fridge for up to 3-4 days. Keep the chipotle sauce and any fresh toppings separate and add them right before eating for the best results. Reheat the potatoes and eggs in the microwave, then pile on your toppings and drizzle the sauce. Absolutely! Fried eggs work great on top of these bowls. If you go that route, skip the cottage cheese and just fry your eggs to your preferred doneness right before serving. This is a great option if you are not meal prepping and prefer a runny yolk.

Do I have to use cottage cheese in the eggs?

Nope! You can omit the cottage cheese and simply add two extra eggs instead. The cottage cheese does help keep the eggs fluffy and moist during reheating, so it is worth trying if you have not before, but it is completely optional.

Storage

Fridge: Store the potatoes and eggs together in an airtight container for up to 3-4 days. Keep the chipotle sauce and fresh toppings stored separately.

Freezer: The roasted potatoes freeze well on their own for up to 2 months. Let them cool completely, then freeze in a single layer before transferring to a freezer bag. The scrambled eggs can be frozen but the texture does change slightly, they are best fresh or kept in the fridge.

Reheating: Microwave the potatoes and eggs in 60-90 second intervals until warmed through. Add toppings and chipotle sauce after reheating.

Ingredients
 

  • 1.5-2 lbs Red or Yukon gold Potatoes (cut into bite size pieces)
  • 2-3 Tbsp. High heat oil
  • 1 tsp. Smoked paprika
  • 1/2 tsp. Chili powder
  • 1/2 tsp. Cumin
  • 1/2 tsp. Garlic powder
  • 1/2 tsp. Salt
  • 1 Onion (diced)
  • 1 Bell Pepper (diced)
  • 10 Eggs
  • 1/3 Cup Cottage Cheese
  • 1/2 Cup Cheese (shredded, cheddar, gouda, pepper jack or your favorite melting cheese)

Easy Chipotle Sauce

  • 2 Tbsp Mayo
  • 1/2 Cup Greek Yogurt (plain and any percent)
  • 1/4-1/2 tsp Chipotle Powder
  • 1 Garlic Clove (grated)
  • 1/2 Lime (juiced)
  • Salt to taste
  • 1 Tbsp. Water (to thin the sauce)

Optional Add-ons:

  • Sliced Avocado
  • Guacamole
  • Hot Sauce
  • Sour cream
  • Salsa or Pico De Gallo
  • Jalapeño Slices or pickled jalapeños
  • Beans
  • Cilantro
