Easy Spiced Oatmeal Coffee Cake

A easy spiced oatmeal coffee cake packed with old fashioned rolled oats and warm spices. Perfect breakfast paired with a cup of coffee the whole family will love.

Ingredients
 

  • 1 1/4 C. All-purpose Flour
  • 3/4 C. Old Fashioned Rolled Oats
  • 1/2 tsp. Salt
  • 1 tsp.Baking powder
  • 1/2 tsp. Baking soda
  • 1 1/2 tsp. Cinnamon
  • 1/2 tsp. Nutmeg
  • 1/2 tsp. Ground Ginger
  • 1/4 tsp. Cloves
  • 1/2 C. Neutral Oil (such as avocado, canola or vegetable oil)
  • 2 eggs
  • 1/2 C. Milk
  • 1/2 C. Plain Greek yogurt
  • 1/4 C. Sugar
  • 1/4 C. Brown Sugar
  • 1 tsp. Vanilla extract

Crumb topping:

  • 1/4 C. All-purpose Flour
  • 1/4 C. Old Fashioned Rolled Oats
  • 1/3 C. Brown Sugar
  • 1 tsp. Cinnamon
  • Pinch of salt
  • 4 Tbsp. Butter (melted)

Instructions
 

  • Preheat the oven to 350 degrees F. Grease or line a 8x8 inch baking pan with parchment paper.
  • In a medium bowl, add the all-purpose flour, rolled oats, salt, baking powder, baking soda, cinnamon, nutmeg, ginger and cloves. Whisk together and set aside.
  • In a large mixing bowl, add the granulated and brown sugars. Add the eggs, oil, milk, vanilla extract, and Greek yogurt. Whisk together until fully combined.
  • Add the dry ingredients to the wet. Stir together until just combined. Set the batter aside and let it rest while you make the oat topping. If possible, allow the batter to rest for 10 minutes.
  • To make the oat topping, add the all-purpose flour, rolled oats, brown sugar, cinnamon and pinch of salt to a medium bowl. Whisk together. Pour the melted butter over the oat mixture and stir.
  • Pour the the oatmeal batter in the greased or parchment line baking pan. Evenly sprinkle the oat topping over the batter. Bake for 33-38 minutes or until the batter is fully set. Remove from the oven and let cool before enjoying.
