Savory High Protein Greek Yogurt Bowl with Feta Fried Eggs

This savory high protein Greek yogurt breakfast bowl with feta fried egg comes together in about 20 minutes and has about 28 grams of protein per serving to start your day off right.

Ingredients
 

  • 1 1/2 C. Greek Yogurt
  • 1 Garlic clove (grated or finely minced)
  • 1 Tbsp. Lemon juice
  • 1 Tbsp. Olive oil
  • 1/2 tsp. Salt
  • Tomatoes (sliced)
  • Olives to taste
  • 1 Tbsp. Dill
  • 2 Eggs
  • 1/4 C. Feta (plus more to sprinkle over bowls)
  • 1 Tbsp. Oil or butter
  • Sourdough bread or pita bread

Instructions
 

  • In a medium bowl, add the Greek yogurt, garlic clove, lemon juice, olive oil, and salt. Mix together until smooth. Divide the yogurt into two serving bowls.
  • To make the eggs, add 1 tablespoon of oil or butter to a large skillet over medium heat. Add the feta to the skillet, creating two circles, for the eggs to be added to center of. Crack the eggs into the middle of the feta circles. Cover and cook until the egg whites are fully set and the egg yokes have reached desired doneness. Season the eggs with salt and pepper to taste.
  • Add a feta fried egg to each bowl, sliced tomatoes and olives. Garnish with additional fresh dill and feta cheese. Serve immediately with sourdough toast or pita bread.
