Ingredients and Substitutions
Greek Yogurt: Use your favorite plain Greek yogurt as the base for the bowls. You could swap for plain regular yogurt or even use hummus in place of the the Greek yogurt.
Garlic Clove: One garlic clove adds to the flavor of the Greek yogurt.
Lemon Juice: Fresh lemon juice gives these breakfast bowls a bright flavor. For best results, use fresh lemon juice. But you can use bottled lemon juice if needed.
Olive Oil: Olive oil creates a smooth and creamy Greek yogurt base. I prefer to use Extra Virgin Olive oil.
Tomatoes: Cherry, grape or heirloom tomatoes all make great choices. But you can use any type of tomato or omit if you wish.
Olives: Olives are added with the breakfast bowls for flavor. You can use your favorite type of olives or leave the olives out all together.
Dill: Dill gives these savory breakfast bowls an herby and fresh flavor. Fresh dill works the best but can swap for dried dill. If you use dried dill, reduce the amount down to about 1/2 teaspoon or to personal taste.
Eggs: You will need 2-4 eggs, depending how many eggs you wish to add to the breakfast bowls. The recipe is created using 2 eggs. If making more eggs, add on 2 tablespoons of feta per egg.
Feta: Feta cheese is cooked with the fried eggs as well as sprinkled over the bowls. You could replace with goat cheese.
Oil or butter: Oil or butter is required for the fried eggs.
Sourdough or Pita bread: Sourdough toast or pita bread to dip into the bowls is so GOOD and I highly recommend!
How to make savory Greek Yogurt Breakfast Bowls
- In a medium bowl, add the Greek yogurt, garlic clove, lemon juice, olive oil, and salt. Mix together until smooth. Divide the yogurt into two serving bowls.
- To make the eggs, add 1 tablespoon of oil or butter to a large skillet over medium heat. Add the feta to the hot skillet, creating two circles, for the eggs to be added to center of. Crack the eggs into the middle of the feta circles. Cover and cook until the egg whites are fully set and the egg yokes have reached desired doneness. Season the eggs with salt and pepper to taste.
- Add a feta fried egg to each bowl, sliced tomatoes and olives. Garnish with additional fresh dill and feta cheese. Serve immediately with sourdough toast or pita bread.
