What you will need to make this breakfast burrito
Eggs: You will need about 4 eggs to create this breakfast burrito. But you can add more or less eggs depending on the tortilla size you are using.
Fries: I like to use my favorite frozen store bough fries to make this breakfast fast and easy. But if you’re up to make your own fries, go for it! I find that the traditional cut fries work the best and get a little crispy. But you can switch it to any style of fries you wish to use.
Cheddar Cheese: I love cheddar cheese with this burrito and always have it on hand. But you can switch up the cheese to whatever you have on hand. Pepper jack or Monterey would both be delicious with this breakfast.
Tortillas: My favorite tortilla to use for this recipe is a burrito size tortilla. It allows you to really pack in all the goodness for a really hearty breakfast. But use any size tortilla, just adjust the filling amount so the tortilla will still roll up.
Salt and pepper: Add salt and pepper to taste to enhance flavors.
Pico de gallo: A simple homemade pico de gallo adds a ton of flavor to the burrito. You will need tomatoes, jalapeno, lime, onion, garlic clove, cilantro and salt to make the pico de gallo. If you wish, you can use a store bought pico de gallo to save time.
Chipotle Sauce: The homemade spicy and smokey sauce is made from chipotle peppers, adobo sauce, Greek yogurt, sour cream, garlic clove, cumin, lime juice and zest and salt.

Other ingredients you can add to this burrito to personalize it
Avocado: Sliced and added to the filling of this breakfast burrito or even a guacamole server on top would be an amazing addition.
Bacon: Add more flavor by adding crispy bacon to the burrito.
Sausage: Give the burrito even more protein by adding your favorite cooked sausage.
Chorizo: Chorizo would be the perfect match with the pico de gallo and chipotle sauce if you want to add more protein and flavor.
Spinach: Give this burrito a little extra green by mixing chopped spinach into the eggs while they are cooking.

Tips and tricks
- Make sure that your pan is hot before adding the rolled tortilla. A hot pan will create a seal on the bottom of the burrito to prevent it from breaking open.
- Adjust the spicy level in the chipotle sauce by adding more less chipotle peppers. One chipotle pepper makes the sauce a little spicy, while going with two will make a hot sauce!
- You can save time by making the chipotle sauce in advance and storing it in the fridge. The sauce will last for 2-3 days in the fridge in an airtight container. The pico de gallo can also be made in advance and stored in the fridge until ready to assemble the burritos.
- If you have leftover chipotle sauce, use it with other recipes. The sauce would be delicious in sandwiches or used as dip for fries.

Breakfast Burrito with Fries and Chipotle Sauce
Ingredients
- 4 Eggs
- 1 Tbsp. Milk
- 1 Tbsp. Butter or oil (divided)
- Pico (recipe below)
- Handful of Fries (cooked)
- 1/3 C. Cheddar cheese (shredded)
- 1 large Tortilla
- Salt and pepper to taste
- Chipotle sauce (recipe below)
Pico de Gallo:
- 1/2 C. Tomatoes (diced)
- 1/2 jalapeño (finely diced)
- 1/2 of a lime (juiced)
- 2 Tbsp. Onion (finely chopped)
- 1 garlic clove (graded or finely chopped)
- Salt to taste
- Cilantro (finely chopped (optional))
Chipotle sauce:
- 1-2 chipotle in adobo sauce
- 1 Tbsp. Adobo sauce
- 1/3 C. Greek Yogurt
- 1/4 C. Sour cream
- 1 garlic clove
- 1/2 tsp. Cumin
- 1/2 lime (juiced and zest)
- Salt to taste
Instructions
- To make the pico de gallo, combine all the ingredients into a medium bowl. Mix until combined. Taste and add salt to personal preference. Set aside or cover and refrigerate until ready to build the burritos.
- To make the chipotle sauce, add all the ingredients together in a food processor or blender. Blend until smooth. Taste and adjust salt to personal preference. Set aside or in the refrigerator until ready to serve the breakfast burrito.
- For the breakfast burrito, add the eggs with the milk in a medium bowl and whisk. Add 1/2 tablespoon of the butter or oil into a medium skillet over medium heat. Pour in the eggs.
- Stirring frequently, scramble the eggs until the eggs are set. Add salt and pepper to taste.
- Lay out a large tortilla. Add the scrambled eggs to the middle. Top cooked fries, pico de gallo, and cheddar cheese.
- Fold in the sides of the tortilla and then carefully roll the tortilla into a burrito.
- Add the remaining 1/2 Tablespoon of butter or oil into a clean skillet over medium heat. Once hot, add the burrito, seam side down. Once golden brown, flip and brown the other side.
- Remove the skillet and enjoy immediately with the chipotle sauce for dipping.
